We periodically upload recipes for simple, delicious food that is free of preservatives and cooked in ways that keep the integrity of the nutrition intact.
NB Please totally refrain from using microwave ovens, as enzymes are destroyed in the process of cooking, thawing or warming food with microwaves. You end up with food that might look delicious, but that is devoid of nutrition.
Citing Dr Lita Lee, who has a doctorate in chemistry and author of The Enzyme Cure (1998, pp30, 55-56), the following:
(p30)"... microwaving is not a viable food preparation technique; it simply kills digestive enzymes, converts the protein into carcinogens or neuro/kidney toxins, and destroys all the vitamins and minerals"
(p55) "Processed foods and beverages, including candy, refined carbohydrates (such as white flour and sugar), and soft drinks produce severe leukocytosis. Leukocytosis simply means that there is an increase in the number of white blood cells circulating in the blood, a sign that the immune system is mobilizing. Microwaved foods fit into this category as well, since microwaving dramatically alters the molecular structure of the food and destroys enzymes"
(p56) "Microwave ovens affect your health in two ways: by emitting electromagnetic radiation into our immediate environment, and by destroying not only the enzymes in the food, but the nutritional value of the food itself.
While people may worry about whether their microwave ovens leak, few consider the effects of microwaves on the food itself. These include: destruction of enzymes and nutrients, transformation of nutrients into toxic substances and/or carcinogens, and leakage of toxic chemicals from the packaging into the food"

Giving up bread and other wheat products seems like an insurmountable challenge for most people. Therefore, we will post some delicious alternatives here!
Wheat and sugar are extremely inflammatory to the body, and we focus on recipes made with almond, coconut and chickpea flour.
Avoid wheat, rye and barley, as well as sugar (and of course artificial sweeteners like aspartame or saccharin, any preservatives, colourants, artificial flavourants, monosodium glutamate (MSG) etc.), and you are well on your way to combating inflammation in your body, and giving it a chance to heal naturally.
We do need healthy fat in our bodies. Not no fat and low fat what we have been led to believe for decades. We need organic products like nuts, butter, cream, whole milk, olive oil, coconut oil. For those who are allergic to dairy products, there will be substitutes too!

Herewith some breakfast and lunch recipes for those with wheat/gluten allergies and lactose intolerance.
EGG PANCAKE
Ingredients:
2 jumbo eggs
1 brinjal/aubergine
Spinach
Celery sticks and leaves
Spices
For the filling, dice brinjal and cook until soft in a bit of water with spices of your choice. Suggestion: turmeric, cayenne, pepper and salt.
Beat the eggs in a bowl, add salt and pepper. Heat dash of olive oil in a pan, pour egg mixture in and turn down heat. Place lid on, steam until cooked on one side. Turn over once cooked – leave lid off.
Place on plate once golden brown and ladle the cooked brinjal on one side of it, topped with pieces of raw spinach and celery. Next, roll into pancake, beginning at the side of filling.
Notes:
* For a smaller pancake, use one egg. Easier to just flip one side over, instead of trying to roll it up.
* Use any filling of your choice, be creative!
EGG IN A NEST
Ingredients:
1 egg
1 red/yellow sweet pepper
½ onion
40g salmon
Spinach
Spices
Cut sweet pepper in half and remove pips, to form a "nest". Place in heated pan and break the egg into the sweet pepper half. Place lid on pan to steam until cooked. In separate pan, fry onion with left-over pieces of the pepper and salmon. Once cooked, garnish with pieces of raw spinach, sprinkled turmeric and cayenne pepper or spices of your choice.
WAFFLE
Ingredients:
150g (1 2/3 cup) almond flour
60g (½ cup) tapioca flour
10ml bicarbonate of soda
5ml mixed spice, non-irradiated
Pinch of salt
120g (½ cup) pumpkin puree
½ cup of water or milk of your choice
2 eggs
3 tbsp olive oil/coconut oil/melted butter
Mix dry ingredients: almond flour, tapioca flour, bicarbonate of soda, mixed spice, salt.
Add pumpkin, eggs, oil and water (add water or milk in small amounts to batter until you are satisfied with texture) and whisk well. Scoop portions of batter into preheated waffle pan.
For the filling, fry onion. Add cherry tomatoes (cut smaller). Once fried, add leftover meat or fish pieces. When cooked, toss in pieces of spinach.
Place on waffle on plate and top with filling.
Notes:
* The waffle freezes well.
* You can make any filling of your choice, whether salty or sweet ( eg. honey with nuts)
* Waffle is a good basis for breakfast as well
Adele's Recipes
Chicken or Lamb broth
The nutrients in broth are easily absorbed by a compromised gut and provides building blocks to restore the gut lining.
The broth can be consumed as a warm beverage or used for soups, stews and sauces
2 x packets free range chicken wings OR 2 x packets free range lamb bones |

Spices and herbs | 2 t organic turmeric 2 t organic cinnamon 3 - 4 bay leaves hand full of fresh thyme Salt to taste |
Recipe notes: Try to use free range meat to avoid hormones and antibiotics. Woolworths stocks free range lamb bones. Woolworths and SPAR stocks free range chicken. | Many broth recipes require garlic and / or apple cider vinegar. I personally don’t like the taste of either in broth and found that garlic can make the broth taste bitter. Cinnamon lends a subtle sweetness to both chicken and lamb |
· Place the wings or bones, water, spices and herbs in a slow cooker. Add as much water as possible. Cook for 48 hours on low heat. Cook a large batch to freeze in small containers.
· After 24 hours, the minerals and amino acids start to release from the bones, making the broth highly nutritious.
· Drink 3 - 6 cups throughout the day to provide gut healing nutrients throughout the day.
